What food cost percentage actually means for your shop
Food cost percentage is the share of each sale that goes to ingredients. If a Large Margherita sells for $16.99 and costs $4.20 to make, the food cost percentage is 24.7%. The gross margin is $12.79.
For pizza shops, a healthy food cost sits between 28-35%. Below 28% and you are likely undercosting your ingredients or using lower-quality inputs. Above 35% and margin pressure will show up in your monthly profit - even in a busy month.
